Ishidaya, which owns Kokuryu Shuzo, a sake brewery with over 200 years of history, has launched the ESHIKOTO project located in Eiheiji-cho, Fukui Prefecture.
"ESHIKOTO" derived from the old Japanese word "eshi," meaning "good," and "to-ko-shi-e(eternal in Japanese Kanji)" read backwards, is the brand name for the new sake brand and this facility.

The vast site overlooks the Kuzuryu River and has future development plans for a distillery and other facilities, making it a major project that Fukui can be proud of worldwide. The facility is located on the second floor and is divided into the east side shop (Ishidaya ESHIKOTO) and the west side restaurant (acoya Fukui). The lighting plan aims to make it a place that promotes gatherings of people and conveys Fukui's culture, by highlighting delicate interior design that utilizes rare materials from Fukui.

The east side shop features Echizen washi paper in black applied to the entire wall, while the west side starts with the entrance to the patisserie in a white color scheme, leading to the gray gradient washi through the restaurant's walls, seamlessly connecting to the black Apero. Both spaces use indirect wall lighting to create an outline of the space. Upper lights are also installed near the windows to emphasize the connectivity of the spaces. The design retains individual concept and theme of respective spaces, while creating a sense of unity. The design is further enhanced by small attention to detail on things like the shelf lighting and daytime and night time dimming scenes, minimizing lights on ceiling and creating a warm atmosphere.
